Thai Chicken (or Quorn for Veggies) Ring
A fantastic technique to learn. Very simple yet very impressive!
2 cooked chicken breast (or quorn chicken) chopped
6 tbsp Mayonnaise
1 red pepper, chopped
4 spring onions, chopped
1 inch fresh ginger, peeled and chopped
1 red chilli, de-seeded and chopped
1 bunch fresh coriander, chopped
2 cloves garlic, crushed
1 lime, zested and juiced
Croissant dough for 12. This can be found in cans with the ready to use pastry usually in the chiller section of the supermarket with the butter. The can will say on it how many pieces it contains and we will need 12 in total. Please keep this refrigerated as it can pop out of the cans if it starts to rise as it warms up.
Simply combine all of the ingredients together in a mixing bowl and fill the desired pastry shape following the above diagrams. Bake on your stone at 180 degrees for about 20 minutes or until pastry is risen and golden.
